This close connection makes it possible to work with ingredients at peak ripeness and at the perfect moment, without compromise. In Lyon, as elsewhere, excellent local producers are not simply found; they are cultivated.
Seasonality: a chosen constraint
Menus change every six to eight weeks, dictated by the rhythms of the seasons, what they demand or allow. No dogma here, simply a conviction.
Working with seasonal produce is simply a matter of giving ingredients their due and serving cuisine that tastes true to its nature.
